I am 5' 9" with long arms and legs, a short torso. The #1 key to seating position is the clutch pedal. the is the one thing that has to be set correctly, then everything else follows from that.
I set the clutch while I am also adjusting the seat bottom back (as they affect each other.) I typically run the seat bottom down in back as far as it can go. If the seat front moves, that is tilted up. Bucket seat style is my goal.
The steering wheel up/down totally so I can see between the spoke to the gauges clearly. the front back of the steering wheel is set so my arms when at the top can be straight out, or nicely curled if near the bottom of the steeringwheel, and balanced when at the 9 and 3 position.
The seat back is rather more straight UP than usual (compared to most other drivers. I cannot stand leaning back very far to drive.. makes me go crazy.. like I am driving some sort of messed up armchair recliner instead of a car...)
The rear view mirror is twisted up on it's mount up as high as it can be pushed, (unlike many who like it low.. I want it up out of the way, and thus also get a better picture of what is behind me) Side mirrors to fill in all blind spot to sides. So I just catch the vehicle next to me with perepheral as it leaves the mirror.. usually that, for me and my upright seating position moves the left mirror angled almost as far outward as it can go.
Once i have a nice seating position I am happy, and rarely change it at all. It annoys me if a seviceman alters the seat while doing service. (But I can understand the need in a car with a clutch)
