Recently I got a Mountune 275 installed, but I also have a Milltek exhaust and downpipe that I had put on about a month or so before. Seeing that the Milltek isn't a part of the 275 kit, would it be advisable to get another remap that takes into account the exhaust and downpipe, especially since I want the car to run more economically?

You can't remap the MP or MR tunes. What you see is what you get.

If you want to do a custom tune you need to buy an unlocked ap3 and start over. Probably not what you wanted to hear. Sorry about that.
Not true.

The DP isn't going to be accounted for in the MP275 tune, so you may have issues with the car running oddly. To be honest, I do not know what it may do to the car, but it usually isn't good when you have all that extra flow, but the ECU is only giving you enough fuel for the stock DP, which can cause lean conditions. In the Subaru world, this means BOOM. The Ford ECU's are pretty smart, so as long as you don't drive it hard, you should be ok until you get the tune addressed.

You would need to contact Mountune to purchase the MR300 tune. See the link below;

mountune MR300 Performance ECU Calibration

You will have to buy the better charge pipes for your intercooler likely. It doesn't need to be Mountune, but again, the MR300 kit includes the upgraded charge pipes so the tune will be set up for that.

You will be fine, you just need to spend a few more dollars, or remove the DP.

Upside is, the MR300 kit is 300chp and 350ctq

What I said is true, you buy the MP, upgrade to MR from MP or go directly to MR. No remapping in the sense of a custom tune revisions.
You just made it sound like he was SOL. You can buy different maps for the MP or MR Accessports, they just need to be Mountune because they are locked otherwise.

Just sounded like he needed to ditch his MTune handset for a completely new one, which isn't the case.

So the car's computer will be confused due to the new exhaust and downpipe? So far it looks like I'm getting some strange fuel usage readings. Due to having the Milltek, I'm assuming that if I want the car running normally I've locked myself into buying the whole 300 kit?

The catback exhaust doesn't do anything for power. It isn't a big deal to have. The downpipe is the issue.

Yes, you kind of are locked into the MR300 kit if you want to keep the car the way that it is. If you remove your DP and re-install the stock one, you will be 100% fine.

If you want to keep the DP, you will need to buy the MR300 tune from Mountune, as well as upgrade your intercooler charge pipes. The MR300 kit is more fun, because more power is better than less power. A scientific fact. So you would be out the $225 for the MR300 tune and $449 for the charge pipes, if you want Mountune. MBRP has a charge pipe kit for $322 on CJ Pony parts, but you would KNOW that the Mountune would fit properly, where the MBRP may need modification.

I was told that the 300 upgrade could turn it into a gas guzzler. What do you think? Would the boost make the car start really drinking it, or is there an economy mode like there is for the 275 upgrade?

Your right foot is the economy mode. This car is good on gas if you don't lay into it every chance you get. I never understood why people need an economy mode.

Is having fuel prices about 4 times that of the US a pretty good reason? I'm not too bothered by economy (between 28 and 30 mpg in town will do), just so long as it doesn't start thinking it's a Lamborghini. After all, that's the reason why I bought the 275 upgrade in the first place, because I was told it would improve the mpg by a few miles, not because I wanted to race it.

I am not sure about the FoST, as I do not have mine tuned yet, but with my Mazdaspeed3 and buddies with STI's that actually get better mileage when they tune their cars. You also need to stay out of it for better MPG's. More power usually makes you want to try it out, but if you can stay out of it, you should be fine. The car will only be worse if you are tipping into boost. With more power, you shouldn't need to downshift to make passes or maintain a speed on an incline. Things like that will help save fuel. You should never go WOT in high gears like 6th though when the RPM's are low. But if you are just going around town, you shouldn't need to go to 3rd and can stay in 4th or 5th with the extra torque.
