I do a handful of track events every year and I'm looking for a high performance brake kit. I am looking at AP Racing or Wilwood but both of these do not have dust boots. The boots are left off as the track temperatures will eventually melt the dust boots. I am concerned about daily driving bootless in Minnesota winter. Does any one have experience with this issue?

For the winter time I'd suggest a good cleaning of the calipers (and pistons exposed), then lube them up a bit with silicone spray, push them in all the way, install new pads and or pad wear plated behind the pad. This will keep the pistons in the bore much of the time and limit the exposure to the salts and grime.

Ultimately it's not the grime that creates issues however..it's the dragging that grime into the seal area when you push the pistons back in. With no PM and you swap in new track pads in May shoving all the grit and such over the seal areas because you're in a hurry to get the change done...that's a maintenance issue not a caliper issue.
